Looking to adjust the valves but am reluctant to drain the engine oil as did it less than a year ago. Does anyone know roughly how much oil I'd lose taking the valve covers off ?

Presume it is a 911 engine.
You will lose a thimble full from the lower covers when you open them up and will leak into the heat exchangers unless you are quick.
You can also get trickles of oil from the action of the oil pump as you turn the engine over to get the cylinders to roc etc.
Upper covers leak very little.
