What are the best ways to remove underseal to inner and outer wings?

Heat gun, big scraper, follow it up with wire brush on angle grinder.
If you don't get the worst of it off first the wire brush melts the underseal and throws it around like napalm.

Which is nice.

Let's put it this way I was glad to cut the whole floor out so I didn't need to clean it off!

Other than that I've done the whole shell... proper grim.

All of the hours...

Joking apart a proper clean back of one inner wing from muddy underseal to clean steel will take about 6 hours, allowing for breaks to rest your arms and cool the grinder down.

I did my 914 20 years ago and at first it is quite satisfying, then you hit a seam with spot welds or a bracket that your scraper gets stuck on, or a dark inaccessible corner and you wish you hadn’t started!

I agree with Gary, heat gun and scraper to start, then a grinder with a wire brush thereafter. They did not exist when I did mine (or I had not discovered them), though they come with an H&S warning as the wires exit at about 150mph so mind your eyes, nose, face etc. And be prepared to get the odd one splintered in your backside as you slide under the car in your overalls.....

The angle grinder wire brush is the kind of thing no professional workshop H&S man would allow. Both the flat one and cup one are proper dangerous when they kick. I still (literally) bare the scars. This was through welding gauntlets, it grabbed and twisted the glove.
I couldn’t move my wrist for a week due to the bruising.

Freeze the underseal, it’s much cleaner and faster.

I have used an oscillating multitool with great result. You can compliment with a heat gun if you want to, or without if you don't appreciate the smell of heated petroleum underseal for another day.

Is it underseal or stone chip? I ask because I have replaced half my floors and need to reinstate as close to original as poss. I've been planning materials on the basis that the underside is done with stonechip? On the recommendation of a bodywork guy, I've had a go on another project car with a tintable product from Novol called Cobra bedliner which would allow me to recreate the correct cream colour of the original coating.
