Can anyone help?
If fitting 7R's to the rear of a 1970 911, what size shims are required?

It varies to some extent from car to car & depends what make & size of tyre you fit, whether your suspension is standard (or uprated) & whether or not you have increased negative camber.
Minimum spacer is usually 6mm up to about 18mm.

If anyone is after some there are two at Karmann Konnection (fully polished) for £1100 the pair

Lightweight, sounds like trial and error then?
Haven't decided on tyre size yet
27mm rear torsion bars, rear sway a ways and very low. Will have
to wait until it's all back together and see what's the best fit.

...Might seem like a silly question but are these shims like washers or complete plates of various thickness with holes drilled ?
...got any pictures ?

They are conventional wheel spacers.
Anything thicker than about 6mm will require longer wheel studs.
