Sorry, is this hands off the wheel AFTER you've gone opposite lock to catch the oversteer? Not hands off during oversteer, correct?

During...Tail out, let go of the wheel and miraculously the 911 straightens itself in time for you to hit the gas as you pass the apex. Just don't practice it on the road...

But then get that lock back off again even faster so it doesn’t go off the other side of the road instead

KS is right.
On the few occasions where me and my 911 were into oversteer coming out of a hill climb bend or two, scooting into/round the bend too hot, oversteer, turn into it like a Champ.
The car being a 911 will then snap into the opposite tail out phase.
Before this happens take the grip off the wheel, the wheel spins to straight ahead and continues to opposite lock and catches the snap oversteer a treat.
Plant the throttle as good as at the same time as it take a while to spool-up, and you will find yourself as good as straight ahead and not in the Armco, tyre wall, trees.
This is not an on-road exercise.
