Thanks for the replies - set the PSI to 3 - would not go any higher so will bypass the pressure gauge / filter tomorrow. Couple of videos of the engine running between 1500 1800 RPM

Have you checked the carb mounting flanges for straightness? Those might be warped due the overthightening and cause a leak which might be hard to spot

Valves
Timing
Carbs

Have you tried it without the linkages attached to the carbs? You could be slightly off kilter with them and it could be holding the carbs slightly open.
