1. Irrespective of aesthetics, IMHO the dished wheel will be better for control - you're quuite a tall chap and bringing the wheel nearer your body is important - assuming seat will be quite far back.

Use it hard from the start for a year so to give it a bit of a lived-in feel and put #4 on!
While you are at work we can accelerate that process for you
Us retired hill climbers are always available.
