The airport is on the way to Essen to technically yes, but from memory the ICE (intercity) doesn't stop at the airport but again I can't quite remeber. There is a local train service, stops quite often and takes a little longer, that I know does stop at the airport. Again from memory the ICE takes 30mins and the regional one up to 45mins but often less. IMO you could stay at the airport or Dusseldorf centre and you'll have no problems with trains. Apparently, there are 2 train stations in Dusseldorf - one in the city centre and one near the airport. Can you use either station to go to Essen?
Can you recommend somewhere nice to eat in Altstad? VRR is the local area and yes the combo ticket covers all, not sure if it also covers additonal travel but if doesn't there are no issues and just pay the difference if ever asked by a conductor, no real checks on any of the trains or when exiting platforms. Trains aren't expensive anyway - just busk it - I work in Germany loads and never any real issues. Taxis are good from the airport to Dusseldorf and the way to do it if more than one travelling or don't want to hang around for trains. And what about the fare from the Dusseldorf airport to your hotel in downtown Dusseldorf? Taxi? Bus? Does the combi ticket cover it even if you land the day before?

Bolkerstrasse is the main street in the Altstad/Oldtown in Dusseldorf where most of the bars and brew houses are.
